An online Friend and awesomely experienced vehicle dweller & vehicle Chef sent me some suggestions for enhancing bread, specifically, adding tomatoes, mozzarella cheese, and rosemary.
I had an open bag of Dollar Tree sun dried tomatoes, some mozzarella, and Dollar Tree's "Italian seasoning" (which contains rosemary), so I tried them, and the result was pretty good. :)
I've made that twice (i.e. my 2nd & 3rd loaves of crockpot bread).
Both times, I used my spoon-only method, and also added a bit of sugar.
The 3rd loaf, I used a bit more yeast, let it sit much longer than my first two loaves, made a larger loaf, and let it bake for a little over four (4) hours.
I think it was the best so far, and this time I split it between 3 meals. :)
Warm water with yeast and sugar, after mixing then sitting for over 10 minutes:
It was much frothier but I had stirred immediately before taking the picture.
Dough immediately after mixing & pseudo-kneading, purely by spoon:
After rising for about one hour (cotton wash cloth was used to cover):
Sorry it's out of focus, however it does demonstrate the superior rise and larger loaf size.
I forgot to take a picture of the risen dough with the flavor ingredients,
but here it is for the 2nd loaf:
