One of my "splurge" treats is corned beef hash with fried eggs.
I typically buy 2-4 cans of the hash per year, only when it's on sale, and make it for major Holidays and/or my birthday.

Tips:

It's best to fry it at medium-low, otherwise the high fat content will cause splatters.
It does use a relatively higher amount of cooking fuel to fry the corned beef hash, so I never make it during the summer.
Otherwise, it's very easy to make, and tasty. :)

(Note that I'm almost out of black pepper, so tried some new "lemon pepper", hence the odd color on the eggs)

The muffin was ok, not fabulous, but a nice incremental boost. :)

I had bought the corned beef hash early in 2022, when it was on sale at Dollar General.
The eggs were almost $4 for a dozen, which is more than I normally spend, but I indulged myself.
The price differences almost cancelled out.
