For decades, I've wanted to learn how to make egg salad, however I had erroneously believed it would be complicated and/or difficult.
I had never even made hard boiled eggs, however I had peeled them (while helping someone else), and found the task both tedious & distressing.

Recently, inspired both by the high price of "prepared" foods and the return of sane egg prices, I did some research, and found out that both hard boiling eggs and making egg salad, are extremely easy.
I've now made two batches (on different days), and both turned out very well. :)


Steps:

  1. hard boil 2-3 eggs per person
  2. peel, then roughly chop up the eggs
  3. add mayonaise, and mix well (I didn't measure the mayo, just squirted some in, mixed, then added smaller squirts until it looked & tasted "right")
  4. (optional) add any/all of:  mustard (roughly a teaspoon), parsley (I used dried parsley flakes), chives, black pepper, lemon, celery, onion
  5. load mixture onto bread or buns
  6. enjoy! :)

I used a regular spoon to do all mixing & chopping, which worked acceptably.
In my first batch, the only "optional" ingredient which I used was parsley flakes.
In my second batch, I used mustard, parsley flakes, and lemon pepper. That batch was significantly better, so I'll continue with that combo. :)

I'm still experimenting with different ways to hard boil eggs, and will post details/tips after some more data.
Summary: it's nowhere near as bad as I had believed, and both times I found peeling the eggs to be non distressing, which could be an age (me) mellowing thing. ;)

Huge Bonus: The eggs can be boiled early in the day (when it's cooler), then, after removing from the water, can be left fridge-less until mid afternoon.
This preparation pattern makes this an ideal summer meal. :)

I estimated the amount of mayo.
Eggs and mayo have recently dropped in price.
The hamburger buns were on sale ($1 for 8 buns), which is a relatively common summer sale price... yes, I stocked up with 4 bags. :)
