A couple of years ago, a food pantry gave me both a can of corned beef, and a bag of mashed potato flakes.
Last year, I finally got around to cracking both, and making a mini feast a little after Saint Patrick's Day! :)
As usual with canned meat, in a fridge-free environment, I planned to eat all the contents during a two day period, when the temperature range was cool.
The forecast outside temperature ranges were: 25-47F and 32-50F.
The actual temperature ranges inside the van were: 34-90F and 40-84F.
Note that I kept the opened can in a styrofoam cooler (located in a cool-ish spot in my van),
so it did not reach anywhere near those inside highs.
I made one meal of just corned beef with a side of mashed potatoes (from dry flakes),
and three small meals of corned beef on one bagel (per meal).
All were easy and tasty. :)
My main regret was lack of variety, in particular, I should have tried making at least one crunchwrap. :)

I will definitely try to find bargains/freebies, and next time I have one, I plan to make several more complex meals, including a Knorr side with veggies, a crunchwrap, and pseudo shepherd's pie. :)
