Seven and a half years ago, I ordered a few #2 cans of Provident Pantry products, including two different kinds of cheese.
Since it's more fun sharing the experience of opening & performing Quality Control with a Friend, during a recent visit to my BeyondAwesome GeekBuddy, I opened the can of freeze-dried Monterey Jack shredded cheese, and we tried some.

We sampled some dry, straight out of the can.

After rehydrating, and letting sit for a little while:

We sampled some of this, plain.

My GeekBuddy likes to make store brand frozen pizzas, and heavily load them up with lots of more interesting & fresh ingredients, so I added some (the somewhat gray-ish smaller blobs on the two left-hand pieces, at their top-rights):

There's a small mound at the bottom left, of the unheated original.

It melted well, and tasted as good as the other cheese on the pizza.
You can't get better than that! :)


Review:

This is the third kind of freeze dried cheese that I've tried, and all have been very satisfactory.
All have melted well, and have tasted fine both "dry" and after rehydrating.

Tips: after rehydrating, let it sit out for a while, to improve the flavor.
If you have a fridge, leave it overnight there.

Bottom line:
For we Fridge Free Folks, freeze dried cheese is a great addition to our cooking options. :)
