One of my "splurge" treats is corned beef hash with fried eggs.
I typically buy 2-4 cans of the hash per year, only when it's on sale, and
make it for major Holidays and/or my birthday.
Opened can of Armour corned beef hash (this brand is usually the cheapest, albeit not the best):
Half a can of raw hash, spread in my frypan, ready to fry:
Finished/crisped hash:
Two eggs, freshly cracked, plus a
mini corn muffin
(as an experiment):
Eggs fried, all ready to eat:
(Note that I'm almost out of black pepper, so tried some new "lemon pepper", hence the odd color on the eggs)
Closeup of eggs, with one yoke "poked" to release its liquid gold:
The muffin was ok, not fabulous, but a nice incremental boost. :)
