This winter, after running out of tortillas (and most bread items), I decided to try making pseudo pizza with pancakes (from Augason Farms Pancake mix).

I had low expectations, and was very pleased with the results. :)
It was easier (albeit much thicker) than homemade tortillas.

• make pancakes as per recipe or mix directions
• after first flip (i.e. first side has cooked), add desired toppings
• continue cooking until cheese is melted and second side has cooked
