This is a van expedient version of a recipe published by Hormel:
SPAMŽ Pumpkin Spice Cheddar Grilled Cheese

Sadly, Pumpkin Spice SPAM sold out its first release day, so I had to improvise.

Recipe:

I made do with regular SPAM...

... and a canister of "pumpkin pie spice" (bought on deep discount for $0.21 at Aldi, right after pumpkin season):

First time I made it, I used a regular apple, however that was moderately expensive ($0.78) since I was far from a mainstream grocery store.

For the batch (two sandwiches) pictured below, I used dehydrated apple chips, which was cheaper, easier, and worked out well. :)

Assembling a sandwich, after frying the SPAM & onions, and rehydrating the apple chips (on top):

After grilling the sandwiches, one opened up to see ooey-gooey-goodness:

Estimated cost: $2 for two filling sandwiches

I forgot to weigh the apple chips, so guesstimated their cost.
I've added that to my To Cook list, and will update this page.
The apple chips are an easy addition, and pump up an already excellent sandwich. :)

I feel the pumpkin pie spice doesn't really add significantly to it, though it also doesn't detract.
For this batch, I used pumpkin spice in one, and left it out of the other.
Both were great. :)
