It's Spring, and I recently replaced my finally-dead AGM
Zombie "House" Batteries
so I've been using the crockpot a bunch, mainly to save fuel,
but also to stress test the new battery and
revel in the return of my mighty crockpot. :)
(I had thought the crockpot was dead, because most of last summer & fall,
it was unable to complete any non trivial cooks,
which I had assumed was a crockpot issue, but was entirely due to the failing batteries.)
Recently, I was gifted two dozen eggs, so it made sense to combine crockpot made
Egg Salad with
crockpot Bread.
They're an excellent combination! :)
Over a period of about a week,
I made two (2) loaves of Bread and four (4) batches of egg salad.
To balance solar availability, I waited for stretches of three (3) consecutive days
of good solar forecast, then made the Bread on the first day
followed by two days of egg salad.
In all cases, my fallback Plan was to use peanut butter if the
post-Bread days didn't have enough solar.
I also did have some slices of Bread with hazelnut spread, cuz... chocolate. ;)
Egg salad, on 1st Bread loaf (I forgot to add my usual pumpkin seeds):
Egg salad, on 2nd Bread loaf (this time I remembered to add pumpkin seeds):
These go very well together! :)
Big bonus is that this is an ideal hot weather meal. :)
I included pumpkin seeds in one of the two Bread batches (had forgotten in the 1st),
and did strongly prefer to have the seeds, so will plan better in future.
This will be one of my core meals, for as long as eggs are reasonably priced (or gifted).
