Kaylee's not-a-blog » Food » Crockpot » Meatloaf, 2nd attempt (excellent), with mashed potatoes (from flakes)

Four days after my successful 1st attempt at crockpot Meatloaf, I made another batch, and this time remembered to make mashed potatoes. :)
I decided to go "fancy", and used an "Idahoan" brand flavored ("Roasted Garlic") instant-cup, which was part of the same food pantry haul as the other main ingredients (I had never bought any of those cups, so this product was an interesting experience).
The result was superb.

The only other change I made was to the glaze.
As before, I skipped all of:   onion, brown sugar, vinegar, black pepper.
I substituted one (fast food) packet of BBQ sauce for one of the ketchup packets.
The final ingredients were 5 packets:   3 ketchup, 1 yellow mustard, 1 BBQ sauce.
This result was still easy, and added a noticeable (but still mild) "kick".
I plan to standardize on this combination, for future glazes. :)

I was a bit rushed, so I ended up adding the glaze about two hours after I started the meatloaf itself, with no (apparent) problems. Opening the lid at that point accelerated the Aroma Therapy. :)
As before, my total cook time was 5 1/2 hours at Low.
