Kenji Lopez-Alt's YouTube channel has several quesadilla videos, including one centered around sauerkraut.
I had seen canned sauerkraut at Dollar General,
so decided to try both. :)
As usual, I greatly simplified Kenji's recipe, just using Swiss cheese and sauerkraut.
The result was decent, and an easy variation.
(NOTE: I've now standardized on making quesadillas in pairs).
