This is a followup to my original article.

My most recent experiments have been with two eggs, somewhat thicker tortillas (i.e. Aldi's wholewheat instead of Dollar Tree's white), and much longer cooking at medium-low heat, which has produced excellent results. :)
Total time is about eight to nine minutes, and I do not stir the egg mixture for the first half.
Once curds start to form, I gently stir.
When everything looks about right, I shut off the heat, fold over the tortilla, and leave it to continue cooking for another couple of minutes.

As you can see from the pictures, the tortilla is perfectly browned and no longer pushing towards burnt. :)
