» eggs (new dry powder "recipe") & homebrew tortillas
After running out of both real eggs and tortillas,
I decided to make a batch of tortillas from scratch,
then make powdered eggs
to eat with them.
The combo was tasty. :)
This was the first time I tried a better ratio for dry eggs:
- 1/3 cup powdered eggs
- (approximately) 1 teaspoon powdered butter or milk
- 1/2 cup water (room temperature)
- optional: some freeze-dried sausage crumbles
- optional: (approximately) 1 tablespoon dehydrated onions
- optional: any other additions (e.g. vegetables, cheese, meat)
Combine and soak for at least 30 minutes (mainly to rehydrate the sausage crumbles), then fry.
Optional: add freshly ground black pepper. :)
The recipe for the tortillas:
- 1 cup whole wheat flour
- 1 1/2 tablespoons oil (any should be fine, but "extra virgin olive oil" is often recommended)
- 1/4 teaspoon salt
- 1/3 cup water
Combine all ingredients, knead for a couple of minutes, let "rest" for about half an hour.
Separate into four (4) parts, form into balls, squish/flatten each,
then pan fry for 1-2 minutes per side.
My two main issues with from-scratch-tortillas are:
- it's difficult to make them thin enough, with no special equipment (i.e. no rolling pin or tortilla "press")
- the amount of fuel used is relatively high
(about 5g of butane per individual tortilla, which works out to about 5 cents each, on top of the cost of the ingredients)
The huge win is that all of the ingredients are longlife/shelfstable & very inexpensive,
so it's a superb backup for those who live in remote areas or may experience supply chain problems.
During my pre-vehicle-dwelling six month research period,
I researched & practiced making tortillas, as a backup, and am delighted that I was ready. :)
