After running out of both real eggs and tortillas, I decided to make a batch of tortillas from scratch, then make powdered eggs to eat with them.
The combo was tasty. :)

This was the first time I tried a better ratio for dry eggs: Combine and soak for at least 30 minutes (mainly to rehydrate the sausage crumbles), then fry.
Optional: add freshly ground black pepper. :)

The recipe for the tortillas: Combine all ingredients, knead for a couple of minutes, let "rest" for about half an hour.
Separate into four (4) parts, form into balls, squish/flatten each, then pan fry for 1-2 minutes per side.

My two main issues with from-scratch-tortillas are: The huge win is that all of the ingredients are longlife/shelfstable & very inexpensive, so it's a superb backup for those who live in remote areas or may experience supply chain problems.

During my pre-vehicle-dwelling six month research period, I researched & practiced making tortillas, as a backup, and am delighted that I was ready. :)
