Avocados are now in season (i.e. affordable) in my area, so last resupply I bought four (4).
I used two to make
bagel "BST-A" sandwiches,
and decided to use the other two to make
(van-made) egg salad & avocado sandwiches, also on grilled bagels.
This was my first ever experience both making & eating this combination, and they turned out very well. :)
After grilling the bagel, I added a layer of avocado to prevent the egg salad falling thru the hole:
